Bacon Cheeseburger Pizza

We think you’ll love this bacon cheeseburger pizza! The recipe builds on some of the favourite Foodie Foray recipes that you’ve come to love (including our Perfect Pizza Sauce and Pizza Dough), and adds in some delicious new surprises – including pickles! Inspiration for this recipe came from the increasing popularity of pickles and provides a perfect home for our own Sweetie Pie variety.
This recipe is a bit long and more complex than most, but we’re sure you’ll be happy with the amazing results! Enjoy.

Ingredients
  

Pizza Crust
  • 1 tbsp yeast
  • 2 cups warm water
  • 5 cups 00 flour
  • 1 1/2 tbsp Kosher salt
  • 1 tbsp olive oil
Pizza Sauce
  • 3/4 lb Roma tomatoes halved
  • 1/8 cup shallots chopped
  • 1/3 cup white onion chopped
  • 3 cloves garlic whole
  • 2 tbsp olive oil divided
  • 1/2 cup vegetable broth
  • 1/4 cup tomato paste
  • 1 tsp Kosher salt divided
  • 1/8 tsp black pepper freshly ground
  • 1/4 cup fresh basil
  • 1/2 tsp chili flakes
Toppings
  • 1 lb bacon
  • 1 lb ground beef
  • 1 tbsp steak spice
  • 1 cup pickles thinly sliced
  • 4-6 cups cheddar cheese grated

Method
 

Mise en Place
  1. Assemble equipment. Peel and chop shallots and white onion, grate cheese, slice pickles, wash and trim basil, halve tomatoes, prepare garlic, measure and separate all ingredients.
Prepare the Sauce
  1. Preheat oven to roast at 350 degrees F.
  2. Place tomatoes, onions, and garlic on a large parchment-lined baking sheet and drizzle with 1 tbsp of olive oil. Sprinkle with 1/2 tsp of salt and the black pepper and roast for 30 minutes in the oven, turning half way.
  3. Remove roasted vegetables and add to a blender. Add all remaining sauce ingredients and blend for approximately 1 minute until fully combined. Scrape down the sides with a spatula and blend for an additional minute until smooth. Set aside until needed.
Prepare Pizza Dough
  1. Add yeast and warm water to the bowl of a stand mixer and allow to bloom for 5 minutes.
  2. Add half of the flour to the yeast and mix on medium until well combined, scraping sides of the bowl with a spatula if necessary.
  3. Once combined, reduce the mixer speed slightly (to prevent the flour from flying everywhere) and add the remaining flour and salt. Continue mixing and increase speed gradually until a cohesive ball of dough is formed.
  4. Cover the mixing bowl with a damp cloth and let rise for a minimum of 20 minutes.
  5. Add a small amount of olive oil to the bowl to help remove the dough.
Prepare Toppings
  1. Preheat oven to 400 degrees F.
  2. Place bacon on a parchment-lined baking sheet and bake for 20-25 minutes (depending on how crispy you like it) until fully cooked, flipping half way through. Remove excess grease and chop into 1/2 inch pieces. Set aside.
  3. Add 1 tbsp of olive oil to a large frying pan and heat over medium. Add the ground beef and cook until browned. Add steak spice about 2 minutes before finishing. Remove from pan and set aside.
Bring it Together
  1. Heat oven to 425 degrees F.
  2. Break dough into up to two (for thick crust) or three (for thin crust) segments and spread out on greased pizza or baking pans.
  3. Add pizza sauce, ground beef, bacon, and pickles and top with grated cheese. Cook for approximately 18 minutes until crust and bottom are evenly browned.

Notes

  • This recipe is enough for 2 large pizzas.
  • If you can find it, I prefer to use "00" flour instead of tradition flour. It's perfect for pizza crust!
