Mise en Place
- Assemble equipment. Melt butter, peel and dice shallots, measure and separate all ingredients, lightly beat egg, lightly toast buns, prepare toppings.
Cooking + Assembly
- Add beef, pork, shallots, steak spice, and breadcrumbs to a large mixing bowl. Mix thoroughly to combine.
- Add Worcestershire sauce, melted butter, and egg to the mixture and stir well.
- Form the mixture into 3.5 inch balls and place on parchment-covered baking sheet. Press down on each ball to form a hamburger patty of approximately 1/2 to 3/4 inch thick.
- Preheat gas or charcoal grill to medium heat. Spray surface with a non-stick coating and grill burgers for approximately 4-5 minutes per side, flipping twice during the process.
- Place burgers on toasted buns and serve with your favourite toppings (e.g. cheese, bacon, pickles, mayo, mustard).
Notes
- Burgers can be made in advanced and stored in the fridge up to 8 ours before cooking.
- They can also be frozen and kept in the freezer for later use. Just be sure to separate the patties with parchment and seal tightly.
- It is always difficult to provide a precise cooking time when dealing with meats. This is because so much depends on the size and thickness of the protein. In this case, I've estimated approximately 4-5 minutes per side, but this could change if your patties are either larger or smaller - and also based on your preference for doneness.
- I've cooked this recipe on a BBQ, but you can just as easily use an indoor grill, non-stick or cast iron frying pan - or even bake them in the oven.
