Black Bean Salmon Burgers + Spicy Mayo

I’m usually not a huge fan of fish burgers, but this Black Bean Salmon Burger is so good that it ranks right up there with some of our favourite beef and pork burgers. The patty itself turns out delightfully crispy on the outside and super tender on the inside. The flavours blend perfect and create a burger that is not only delicious, but very healthy as well.

Ingredients
  

  • 2 lbs fresh salmon diced
  • 2 cups black beans drained
  • 1 shallot minced
  • 1 tbsp capers drained
  • 1 cup Panko breadcrumbs
  • 1 tbsp soy sauce
  • 1 tbsp Old Bay seasoning
  • 1 tsp Kosher salt
  • 1 tbsp fresh chives chopped
  • 2 tbsp butter melted
  • 1 large egg
  • 6 hamburger buns lightly toasted
Spicy Mayonnaise
  • 1 cup mayonnaise
  • 1 tbsp Sriracha
  • 1/2 lemon juice + zest
  • 1 tsp Cajun spice
  • 1/2 tsp Kosher salt

Method
 

Mise en Place
  1. Assemble equipment. Dice salmon, chop chives, peel and mince shallot, melt butter, drain capers and beans, make spicy mayo, measure and separate all ingredients.
Cooking + Assembly
  1. Place black beans and capers in food processor and pulse to chop.
  2. Add bean mixture, salmon, and all remaining ingredients to a medium bowl and mix well to combine.
  3. Form into balls and then press into uniform patties on a large, greased, parchment-lined baking sheet. Chill the burger patties in the fridge for 30 minutes prior to cooking.
  4. Preheat gas or charcoal grill to medium heat. Spray surface with a non-stick coating and grill burgers for approximately 4-5 minutes per side, flipping twice during the process.
  5. Make the spicy mayo by combining all ingredients in a small bowl and whisking until well combined.
  6. Place burgers on toasted buns and serve with your favourite toppings (e.g. cheese, lettuce, tomato).

Notes

  • These burgers can also be cooked on the stove by combining 1 tbsp each of oil and butter in a large frying pan and cooking over medium heat for approximately 8-10 minutes (turning half way through).
  • Drizzle the burger patties with lemon juice at the end of grilling for some additional zip.
  • For a fun alternative you can also change this up to a meatball form!
