Mise en Place
- Assemble equipment. Measure and separate all ingredients.
Bring it Together
- Toast coconut, pepitas, and sunflower seeds separately in a small frying pan over medium heat. Remove from heat and place in a large mixing bowl. Add chia seeds.
- Break chocolate into small chunks and add to a medium saucepan. Add water and maple syrup and heat over medium-low until chocolate is fully melted.
- Pour melted chocolate mixture into the mixing bowl and stir well to combine.
- Use a spoon to remove approximately 2 tbsp of the mixture and form into small clusters. Place the clusters on a parchment-lined baking sheet and refrigerate for 1 hour until firm.
Notes
- Try changing this recipe up by adding in some nuts or Keto-friendly fruit (e.g. dried cranberries, pomegranate arils), or both.
- Most experts suggest that a) chocolate can be safely stored for months at a time, and b) that you should never store chocolate in the fridge. As a result, once the clusters have firmed up, seal them in an air-tight container and store them in a cool, dry place that's out of the sun.
- Note that the preparation and cooking time indicated does not include the 1 hour refrigeration time that is required for the clusters to firm up.
