Mise en Place
- Assemble equipment. Peel and chop onion, juice and zest lemon, measure and separate all ingredients.
Cooking + Assembly
- Add butter to a large frying pan and melt over medium heat.
- Add chopped onion and sprinkle with 1 tsp of salt.
- Reduce heat to low and continue cooking for 30 minutes, adding the sugar half way through. Stir regularly with a wooden spoon to avoid burning. Once cooked, reserve 2 tbsp of onion for garnish.
- Place remaining ingredients into a food processor and blitz. Add cooked onions and continue to process until smooth, adding additional water and/or oil if too thick. Transfer to a serving dish, top with reserved onion, and drizzle with a small amount of olive oil.
Notes
- Serve with baked pita, Naan bread, crackers, or fresh vegetables.
