Perfect Pizza Sauce

Call me crazy, but I`m a person that fully believes that I can make pretty much anything better from scratch than I can buy from a can or package at the grocery store. This is especially true when it comes to sauces. In this case – pizza sauce.
Around our house, homemade pizza is a favourite of both friends and family. Whether it’s baked in the oven, or in a more traditional pizza oven, the key to any great pizza is the sauce. Sure, the crust and the toppings are pretty key, but a scratch-made sauce will bring everything together perfectly and leave your guests with a smile on their faces. So forget about that canned sauce and give this one a try. Your pizza will be glad you did!

Ingredients
  

  • 1 1/2 lbs Roma tomatoes halved
  • 1/4 cup shallots chopped
  • 3/4 cup white onion chopped
  • 5 cloves garlic whole
  • 3 tbsp olive oil divided
  • 1 cup vegetable broth
  • 1/2 cup tomato paste
  • 1/2 cup fresh basil
  • 2 tsp Kosher salt divided
  • 1 tsp chili flakes
  • 1/4 tsp black pepper freshly ground

Method
 

Mise en Place
  1. Assemble equipment. Prepare tomatoes, peel and chop onions, peel garlic, trim basil, measure and separate all ingredients.
Bring it Together
  1. Preheat oven to roast at 350 degrees F.
  2. Place tomatoes, onions, and garlic on a large parchment-lined baking sheet and drizzle with 2 tbsp of olive oil. Sprinkle with 1 tsp of salt and the black pepper and roast for 30 minutes in the oven, turning half way.
  3. Remove roasted vegetables and add to a blender. Add all remaining ingredients and blend for approximately 1 minute until fully combined. Scrape down the sides with a spatula and blend for an additional minute until smooth. Spread liberally on your favourite pizza crust, add toppings and cheese, and enjoy.

Notes

  • This sauce is a perfect compliment to our fantastic Pizza Dough recipe.
  • Properly stored, homemade pizza sauce will last for up to four days in the refrigerator. To further extend the shelf life you can always freeze it for later use.
