Mise en Place
- Assemble equipment. Peel and core avocado, dice shallot and tomato, trim and tear cilantro, peel and mince garlic, juice and zest lime, measure and separate all ingredients.
Cooking + Assembly
- Mash prepared avocado in a medium mixing bowl until the desire texture is achieved.
- Add remaining ingredients and stir well to combine. Taste test and adjust lime and salt accordingly.
- Cover guacamole with plastic wrap or a smoking dome and apply a light smoke. Leave mixture covered for 5-10 minutes then transfer to a non-metal serving bowl and refrigerate until needed.
Notes
- I prefer a fairly smooth texture for my guacamole, but you can choose a light mash to achieve an even chunkier feel.
- If you don’t have one, similar results can be achieved by adding a few drops of liquid smoke to the guacamole.
- Fresh guacamole is best served immediately after completion.
- I like to use hickory chips for the smoke in this recipe, but other woods will work just as well.
