Tzatziki

I recently commented on social media that fresh Tzatziki is possibly the “perfect summer sauce”. Sure, homemade BBQ sauce and chimichurri are up there, but there’s something about silky, yet crisp, flavour of Tzatziki that puts a smile on my face every time I eat it.
Our take on this classic delivers a delicious blend of cucumber, lemon, garlic, and dill that pairs perfectly with grilled meats and vegetables – especially Greek souvlaki.

Ingredients
  

  • 1 cup plain yogurt
  • 1/2 cup cucumber grated
  • 1 lemon juice + zest
  • 1/2 tsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp fresh dill chopped
  • 1 tsp Kosher salt
  • 1/8 tsp white pepper

Equipment

  • medium glass mixing bowl
  • spatula
  • citrus juicer
  • grater
  • microplane
  • measuring cups and spoons

Method
 

  1. Assemble equipment. Peel and mince garlic, grate cucumber, juice and zest lemon, wash and chop dill, measure and separate all ingredients.
Mise en Place
  1. Place all ingredients in a medium glass mixing bowl and fold together using a spatula.
  2. Cover and refrigerate for a minimum of 30 minutes (3 hours preferred) before serving.
