Recipes
One of the primary focuses of Foodie Foray will be to share some of our favourite recipes. Over the years we’ve had the opportunity to enjoy some amazing dishes, and we’d be remiss if we didn’t pass these along to our foodie followers.

Smoked Trout Mousse
This dish builds off the amazing smoked trout technique featured in our Smoked Trout with Orange Maple Drizzle recipe that we featured back in March 2020. It uses the same basic marinade and smoking method, but presents the fish in a new and exciting way. I’ve made this Smoked Trout Mousse appetizer on several occasions…

Seared Scallops with Parsnip Purée + Pomegranate
This Seared Scallop with Pomegranate recipe offers an incredibly dynamic flavour profile that highlights the creamy sweetness of the parsnips and maple syrup, crisp texture and tanginess of the pomegranate arils, and beautiful richness of the scallops. The dish is truly elegant and fits easily in any menu as either a sophisticated starter or full…

Pea Purée + Tarragon and Truffle
In my opinion, puréed vegetables are extremely underrated. I find that they allow you to take advantage of the fresh flavour of the vegetables, while allowing room to add new, exiting flavour elements to the overall profile. And not only do they go perfectly with pretty much anything, they are super simple to make.

Perfect Pizza Sauce
Around our house, homemade pizza is a favourite of both friends and family. Whether it’s baked in the oven, or in a more traditional pizza oven, the key to any great pizza is the sauce. Sure, the crust and the toppings are pretty key, but a scratch-made sauce will bring everything together perfectly and leave…

Perfect Pizza Dough
I started making homemade pizza dough back in 2020 and instantly fell in love with this recipe. It packs a lot of great flavour despite only having a few key ingredients and comes out perfectly crispy every time. This recipe is perfect for thin crust pizzas like our imaginative Brie, Bacon, Mushroom and Caramelized Onion…

Hoisin Sauce
This is another one of those recipes that may cause you to re-think ever using store-bought sauce again. This homemade Hoisin sauce is incredibly flavourful and full of natural, fresh ingredients that will make your dishes shine. It can be served alone as a dip or a side, or be used as a main ingredient…

Whipped Feta Cucumber Bites
These whipped feta cucumber bites are fresh and light and make for a perfect weekend or afternoon tea appetizer. The crunch of the cucumber plays perfectly with the saltiness of the feta and freshness of the dill. They are incredibly healthy and will definitely remind you of summertime.

Four Mushroom + Garlic Soup
I know that I probably say this too much, but this Roasted Mushroom and Garlic soup is one of my favourite recipes. Interestingly, I consider it to be the “mullet” of my recipe collection – business up front and party in the back. Or, more specifically, it can just as easily be served as a…

Churned Butter
If had known years ago that making your own churned butter was so easy, I would never have bought butter in a grocery store again. On a recent trip to Ireland we encountered a number of restaurants that proudly offered “churned” or “artisan” butter as part of their menu offerings. Needless to say, the stuff…

Chimichurri Verde
The recipe is more in line with some of the chimichurri dishes we’ve experienced in Mexico and would not be considered “traditional” in any way. This version includes cilantro and uses a lime base – along with the dominant parsley and garlic flavours – which we find heightens the overall flavour profile of the sauce.
