Dill Pickle Cheese Ball

As a tribute to National Cheese Ball Day on April 17th we thought it might be fun to put together an interesting take on this charcuterie board classic that uses our famous Foodie Foray pickles. This Dill Pickle cheese ball offers up everything that you would expect in this classic appetizer, with some added crunch and zestiness from the pickles.

  • Assemble equipment: hand or stand mixer, medium mixing bowl, small frying pan, plastic wrap, measuring cups and spoons. Toast black sesame, chop pickles and dill, grate cheese, mince garlic, measure and separate all ingredients.
  • Cooking and Assembly
  • Toast sesame in a small frying pan over medium heat for 3-5 minutes. Set aside to cool.
  • Combine cream cheese, sour cream, pickles, pickle brine, and 1 cup of cheddar cheese in a stand mixer. Mix on medium speed using a mixing attachment until well combined. Fold in garlic, 2 tablespoons of dill, salt, and pepper on low speed.
  • Remove from mixer and form into a tight ball. Wrap in plastic wrap and refrigerate until firm.
  • Combine remaining dill, cheddar cheese, sesame, and lemon zest in a small bowl. Roll the firm cheese ball in the herb coating and refrigerate until served.
