Whipped Feta Cucumber Bites

These whipped feta cucumber bites are fresh and light and make for a perfect weekend or afternoon tea appetizer. The crunch of the cucumber plays perfectly with the saltiness of the feta and freshness of the dill. They are incredibly healthy and will definitely remind you of summertime.

Ingredients
  

  • 2 English cucumbers
  • 1 cup Feta cheese crumbled
  • 1 cup cream cheese softened
  • 3 tbsp Parmesan cheese grated
  • 1/2 lemon juice + zest
  • 1 clove garlic minced
  • 2 tbsp fresh dill divided
  • 1 tsp sea salt
  • 1/4 tsp black pepper freshly ground

Method
 

Mise en Place
  1. Assemble equipment. Peel and mince garlic, juice and zest lemon, grate cheese, finely chop 1 tbsp dill, measure and separate all ingredients
Bring it Together
  1. Remove cream cheese from fridge and allow to soften at room temperature.
  2. Wash and remove the two ends from the cucumber. First, cut the cucumber lengthwise, removing approximately 1/3 of the top – enough to expose the seeds. Second, remove a small portion of the bottom of the cucumber – enough to allow the cucumber to stand on its own.
  3. Use a small spoon to remove the seeds from each of the cucumbers. Sprinkle the cucumber with sea salt and place in the fridge uncovered for approximately 20 minutes.
  4. Add the softened cream cheese, feta, garlic, lemon juice and zest, and pepper to a mixing bowl. Use an electric hand mixer to whip the ingredients until fully combined, then fold in the Parmesan and 1 tbsp of finely chopped dill.
  5. Remove the cucumber from the fridge and pat dry with paper towel to remove excess water. Place the hollowed cucumber on a cutting board and use a spoon to fill with the cheese mixture.
  6. Cut the filled cucumber into approximately 1 inch pieces and garnish with additional 1 tbsp of fresh dill. Place on a serving dish and enjoy.
