I am completely obsessed with this new Zesty Dill BBQ Sauce recipe. After playing around for what seems like years trying to find the perfect blend of sweet, spicy, and savory, I finally think I’ve found something that works. And not only is it full of flavour, but it’s also very versatile, acting as a great dipping sauce or mopped onto your favourite meat or seafood for grilling.

Ingredients
  

  • 400 ml tomatoes diced
  • 2 shallots minced
  • 6 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 320 ml tomato paste
  • 5 tbsp brown sugar packed
  • 3 tbsp molasses
  • 2 tbsp Worcestershire sauce
  • 3 tbsp water
  • 3 tbsp fresh dill finely chopped
  • 2 tsp mustard powder
  • 2 tsp smoked paprika
  • 1 tsp chili flakes
  • 1/2 tsp Kosher salt
  • 1/4 tsp black pepper freshly ground
  • 1/8 tsp cayenne pepper

Method
 

Mise en Place
  1. Assemble equipment. Peel and mince onions and garlic, dice tomatoes, chop fresh dill, measure and separate all ingredients.
Cooking + Assembly
  1. Heat olive oil and butter in a medium saucepan over medium heat. Add shallots and cook for approximately 3 minutes, stirring continuously with a wooden spoon to avoid browning.
  2. Add garlic to the pan and continue to cook for another 1-2 minutes until soft and fragrant.
  3. Continuing over medium heat, add the diced tomatoes, tomato paste, Worcestershire, molasses, brown sugar, water, and all dry spices (i.e. mustard, cayenne, salt, pepper, smoked paprika) and bring to a simmer. Reduce heat to low and simmer for approximately 15-20 minutes until slightly thickened.
  4. Add the sauce mixture to a blender. Add the fresh dill and remaining water and blend on high for approximately 1 minute. Scrape the sides of the blender with a spatula and pulse to ensure that all ingredients are well blended, adding additional water in small amounts if the mixture becomes too thick.

Notes

  • You can easily change up the flavour of this BBQ by substituting the dill for other fresh or dried herbs, by removing or adding more cayenne (or peppers) to increase spiciness, or by adding maple syrup or honey to increase sweetness.
  • This recipe will store in the fridge for up to two weeks.
