I find that hummus is extremely versatile and enjoy trying different flavour combinations of this popular dish. For this Honey Caramelized Onion Hummus version we've enhanced the traditional hummus flavour by adding delicious honey and caramelized onion.
The result is a slightly sweet, and somewhat savory dish that provides a perfect centerpiece for your holiday gathering or Friday night charcuterie board.

Ingredients
  

  • 2 cups chickpeas rinsed
  • 1 large Spanish onion chopped
  • 1/2 cup tahini
  • 2 tbsp butter
  • 2 tbsp honey
  • 2 tsp Kosher salt divided
  • 1 tbsp sugar
  • 1 lemon juice + zest
  • 1/2 tsp cumin
  • 6 tbsp olive oil
  • 6 tbsp water

Method
 

Mise en Place
  1. Assemble equipment. Peel and chop onion, juice and zest lemon, measure and separate all ingredients.
Cooking + Assembly
  1. Add butter to a large frying pan and melt over medium heat.
  2. Add chopped onion and sprinkle with 1 tsp of salt.
  3. Reduce heat to low and continue cooking for 30 minutes, adding the sugar half way through. Stir regularly with a wooden spoon to avoid burning. Once cooked, reserve 2 tbsp of onion for garnish.
  4. Place remaining ingredients into a food processor and blitz. Add cooked onions and continue to process until smooth, adding additional water and/or oil if too thick. Transfer to a serving dish, top with reserved onion, and drizzle with a small amount of olive oil.

Notes

  • Serve with baked pita, Naan bread, crackers, or fresh vegetables.
