Most would say that the perfect side dish doesn’t exist, but these Miso Parmesan Potatoes might change that. This recipe is incredibly simple to prepare and is the perfect accompaniment to virtually any protein-based dish. The mashed potatoes are silky and savory, with just the right amount of texture. The added white miso takes them to another levels and puts a delicious spin on this classic side.

Ingredients
  

  • 6 white potatoes unpeeled + cubed
  • 1 tbsp butter
  • 2 cloves garlic minced
  • 2 tsp white miso
  • 4 tbsp heavy cream
  • 1/2 cup Parmesan cheese grated
  • 2 tsp fresh dill chopped
  • 1 tsp Kosher salt divided
  • 1/2 tsp black pepper freshly ground

Method
 

Mise en Place
  1. Assemble equipment. Wash and cube potatoes (unpeeled), peel and mince garlic, grate cheese, chop dill, measure and separate all ingredients.
Cooking + Assembly
  1. Add cubed potatoes to a large pot of salted water and bring to a boil. Cook for 10-15 minutes until soft and tender. Drain and set aside.
  2. Add butter to the pot, then the garlic and saute for 2 minutes over medium heat.
  3. Return potatoes to pot. Mash well, then add in remaining ingredients and stir until smooth.
