Simple Steak Marinade

I've never been a big fan of marinades – especially for steak. I'd say I'm a bit of a purist and feel that it's better to let the natural flavour of a protein shine through and stand on it's one. That said, there are certainly some – flank steak for example – where a good marinade can help to completely transform the end result into something magical. This steak marinade is simple yet effective. It tastes great and takes no more than 10 minutes to prepare. Ingredients
  

  • 1/2 cup soy sauce
  • 1/2 cup olive oil
  • 1/4 cup Worcestershire sauce
  • 3 tbsp red wine vinegar
  • 6 cloves garlic minced
  • 2 limes juice + zest
  • 1 orange juice + zest

Equipment

  • microplane
  • citrus juicer
  • whisk
  • small mixing bowl
  • measuring cups and spoons

Method
 

Mise en Place
  1. Assemble equipment. Zest and juice limes and orange, peel and mince garlic, measure and separate ingredients.
Bring it Together
  1. Add all ingredients to a small mixing bowl and whisk vigorously until well combined. Add meat and marinade to a large Ziploc bag and allow to marinate in the fridge for 3-5 hours (depending on the cut and thickness of the meat).
  2. Remove meat from bag, discard remaining marinade, and pat to dry before cooking.

Notes

  • Fun fact! Most of the calories in a marinade do not get absorbed by the protein. Almost all the oil and sugar stay behind in the bowl.
