We had the opportunity to try this Irish Potato Bread on a recent trip to Michelin-starred Aniar restaurant in Galway, Ireland.

Mushroom and Caramelized Onion Pizza

Pizza Dough

I first made this pizza dough three years ago and instantly fell in love with it. It packs a lot of great flavour despite only having a few key ingredients and comes out perfectly crispy every time.

Tiramisu

I have a confession to make. The first tiramisu I ever tried was while working at a high-end Italian restaurant in Sudbury, Ontario. It was made by Magdelena – an 80+ year-old grandmother who was a master of anything Italian – especially tiramisu. It was the absolute best, and to this day I search for......

Roasted Butternut Squash and Charred Red Pepper Thai Soup

This soup has been one of my go-to recipes for a few years now. It’s sophisticated enough to be served at a formal dinner party and is easy enough to make for a simple weekend lunch. You’ll love the amazing fragrance of this recipe which will full your kitchen as you’re cooking.

Pork Larb with Tangy Thai Vinaigrette

Once you get over the seemingly strange name of this dish you’ll realize that it’s absolutely delicious. Larb, meaning “meat salad”, was once the unofficial national dish of Laos that eventually found it’s way to Thailand. I’ve substituted the traditional toasted rice that is normally part of this recipe in favour of using toasted sesame......

Roasted Garlic Tomato Sauce

This homemade tomato sauce is so easy and flavourful that you might never go back to store bought. If you have the time why not go completely natural and use local, fresh vegetables, herbs and spices in your sauce. This sauce is incredibly versatile and can be used directly in a vegetarian pasta. You can also add a protein (e.g. ground beef, veal, or pork) to build a meat or Bolognese sauce, or use as a substitute for pizza sauce or topping for meatballs or chicken.

Chicken Parmigiana

There’s no other way to put it – this recipe is a comfort food classic! Built a top a crispy, juicy chicken breast and topped with zesty tomato sauce and gooey mozzarella cheese you can’t help but fall in love with this dish. It’s simple, yet surprisingly elegant, and works perfectly as either a casual weekday main course or formal dinner party star.

Chimichurri Verde

This Chimichurri Verde is a fresh, delicious, and healthy sauce that pairs well with a variety of dishes, but is best known as a steak sauce.

This is another one of those recipes that may cause you to re-think ever using store-bought Hoisin sauce again. This sauce is incredibly flavourful and full of natural, fresh ingredients that will make your dishes shine. It can be served alone as a dip or a side, or be used as a main ingredient in other dishes – as we have done with our Sticky Pork Belly appetizer.

Sous Vide Pickles

For typical pickles you’d be looking at a marinating period of 4-5 weeks. With the sous vide method, we’re talking 4-5 hours. Incredible! And the end result is as crunchy and flavourful as the ones you’d need to wait for. And maybe the best part is that you can add whatever spice blend you like. For these pickles I’ve gone with a more traditional blend of garlic and dill, but feel free to experiment. I can assure you that the results will the delicious.

Served with our Roasted Garlic Tomato Sauce it makes a perfect appetizer for a formal dinner or addition to a charcuterie board. It’s even hearty to stand alone as a fully vegetarian main course.

Parmesan Truffle Fries

It’s quite possible that these Truffle Parmesan Fries will leave you saying “these are the best fries I’ve every had!”. I’ve actually heard that comment a few times, and I wholeheartedly agree. First, I love Parmesan cheese; second, I love truffles; and third I love french fries – so this is a match made in heaven. They are light, crispy, and full of outstanding flavours. Eat them alone as a snack, or pair them with a more sophisticated Steak Frites dish. You’ll love them!

Sticky Sesame Cauliflower Wings

We’ve been enjoying a dish very similar to this one at the very popular Pure Kitchen restaurant here in Ottawa for the past couple of years and have been trying out different ways to recreate it. We tried deep frying, sauteing, and even an air fryer method, but none of our attemps came close to the crunchy cauliflower we were trying to achieve. Usually, everything just ended up as mush, or the sauce wouldn’t stick because the breading was wrong. This needed to be rectified!

Campfire Beef Chili

I have to admit that I had a really difficult time naming this recipe. Usually I like to add some kind of adjective that helps to describe a dish, like “spicy”, “smokey”, or “crispy”. And sometimes this includes a detail about how the dish is cooked – like “seared”, “whipped”, or “home-churned”. But in this......

Beurre Blanc

This classic French beurre blanc (or literally “white butter”) was actually an accidental creation of Chef Clémence Lefeuvre dating back to the early 1900s. Classic Sourdough Bread

There’s just something so satisfying about making fresh bread. Some would say that it’s the amazing smell that fills the house when it’s baking, others would argue that it’s the outstanding freshness of loaves when you eat them. I’d like to say that it’s both – and then some. For me, I think it’s also......

Caesar Dressing with Capers

When I was about 14 years old a family friend taught me how to make classic Caesar salad dressing from scratch.
